I am all about the quick dinner. There is a time and place for more arduous culinary adventures, but usually the weeknights are reserved for the simple and healthy. At least as far as I’m concerned. Plus, this past week has been dedicated to a non-stop Supernatural marathon, and Dean and Sam Winchester’s war with all things that go bump in the night have top priority (I start my new job next week, by the way, in case you have concluded that I have completely no life other than TV/movie marathons and constant book reading.)
You can make this dish in under 20 minutes. Easy. And it’s delicious, considering its all-star trio of roasted red peppers, spinach, and feta. Really, you can’t go wrong. I paired it with some sautéed garlic zucchini for extra veggie goodness. Enjoy!
- 1/2 lb salmon, cut into two pieces
- 1 clove of garlic, minced
- handful of baby spinach
- 1/4 cup roasted red bell peppers, chopped
- 2-3 tablespoons feta cheese, crumbled
- olive oil
Preheat oven to 400°
Lightly spray salmon filets with olive oil spray and season with salt and pepper. Roast for 8-10 minutes. Meanwhile, heat 1 teaspoon of olive oil in a skillet over medium low heat. Add garlic and sauté for a minute. Add spinach and sauté another minute until wilted. Add peppers and feta and until warmed through and top roasted salmon.
